Friday, I love you! We have had a busy week, and we have a busy weekend too. One day last week while I was over at my daughter's house babysitting the girls, I was looking through a new cookbook that she has been raving about. It is called WeeLicious. It focuses on healthy meals and getting the kids involved in helping to cook. Everything she has made out of this book is fantastic! I made the baked taquitos last week after hearing her talk about them. Those were delicious! I saw a recipe for baked garlicky green beans, and made these the other night. YUM!!
Recipe is not exact, I just did it from memory. Wash green beans and snap into pieces. Dry thoroughly. Have three bowls. One with two beaten eggs. One with 1/4 cup or so of flour. One with Whole Wheat Panko bread crumbs. Mine were not whole wheat. Season the flour with salt and pepper and garlic powder. I used seasoned salt too. Mix.
Taking a few beans at a time, dredge in flour, then dip into egg, and then roll in panko bread crumbs. Lay in single layer on baking sheet. Bake for I think 20 minutes or so, until golden brown.
These are so crunchy and tasty!!! A bit time consuming, but worth it!
I wanted to make a quick meal to go with this. I had thawed a pound and half of lean ground turkey. I made meatballs by adding one egg, handful of seasoned bread crumbs (regular bread crumbs, not panko), salt and pepper, and chopped spinach, and a large handful of chopped mushrooms.
Brown in a bit of olive oil. When browned, I added a capsule of beef bouillon. I love this new product from Knorr. I have the chicken stock too.
I happened to have had the tea kettle on with hot water, so I just added about a cup and half of hot boiling water to this and stirred until incorporated. With heat on medium, I added two cans of lo fat cream of mushroom soup, stirring to dissolve. Then put the lid on and turned to low for the time the green beans were in the oven.
Meanwhile I cooked a bag of no yolk egg noodles. When al dente, I drained the noodles, and poured the mushroom meatballs over it. So good! So easy. And so quick!
We were so hungry, I didn't even bother to make a salad to go with it. We ate it and watched the Lakers beat the Celtics!!!

My boys love those green beans! We do that with burgers in the summer instead of fries. We used to buy them from Schwan's but I'd be so much happier making them myself. Thanks for the recipe!

I'm making those beans tomorrow! I just need to try to figure out what to make with them. Just bought some Adobo and mango chicken sausage from Trader Joes the other day for the grill, maybe I'll do that. Off to the doctor to get something for this sinus infection. Not painful, just annoying and you know how I hate being annoyed. Love ya!

It all sounds delicious. I am going to try making the same meal. I don't know about the special bread crumbs... did you call them panko? I will have to go look for them. How are they different from regular bread crumbs?
