Apple Pannycakes with sweet granola topping

I saw Ellie Krueger(sp?) on the food channel do this recipe a while back and thought it looked so good. So I made them this morning for Noah and I. They ARE so good!!!! I used the Fiber One pancake mix, because my daughter Erika raves about it, and it is high in fiber and low in fat. I took one apple, cored and diced it, put it in micro for 1 min. with 1 T water to soften. Added apples to pancake mix. Meanwhile, take your raw seeds, almonds, pumpkin, sunflower and sesame, and toast them in a dry pan on med-high heat. May need lid, sesames are hoppers!!
Pour that into bowl. Add about 1 T sugar free or lo fat syrup, and a T or so of brown sugar. I only made enough for the two of us, so just a little, but alter it to your needs. Mix together for your sweet granola topping.
Make your pannycakes, and then top with granola. DELISH!!!!!! I didn't give Noah the seeds, just the pannycakes. He gave it two thumbs up!

Kris - remember the apple pancake at the pancake house. Oh those were the days, to eat the whole thing with a nice cup of coffee. Ummmmmm.

Thanks Shelbie! What a nice compliment. I do love to cook, and I know Greg truly appreciates that he gets to eat pretty well.
Do try the pancakes. They were so good. And tasted much better even than the photo looks!!
