Beef Barley Soup




Today was finally a cool and breezy, Autumn feeling day. The perfect kind of day for a pot of soup.  This is a recipe I got from a quilt shop years ago.  I have changed it up a wee bit, and I make this hearty, comforting soup often.  The ingredients are all shown above, with the exception of the stew beef that I had already browned and had simmering on the stove in my Dutch Oven.   I began by browning 1.5 pounds of stew meat in a bit of olive oil, and then once brown, toss in a couple bay leaves, and about 2 tsp of Vegit seasoning and let simmer for about an hour with lid on.  In another pan, saute one brown onion, several cloves of minced garlic, and 3-4 carrots til soft, about 3-5 min.  Add this to meat and then add 4 cans of beef broth, 1 large can of diced stewed tomatoes, and salt and pepper to taste, and let this simmer on low for a couple of hours.  About 2 hours before serving, add 1 cup pearl barley and replace lid and continue to simmer until barley is done.  Also, add the zest of one whole orange to soup pot. Just before serving, saute a pound of mushrooms in 3/4 stick of butter.  When soft, add about 1/2 cup full bodied red wine, reduce slightly and add to soup pot.  Garnish with fresh parsley and enjoy!   I meant to get more pics of cooking, but wound up taking this to Gennifer and Jake's and finished cooking it there and then had dinner with them.  
In my hectic week I forgot to post a favorite cooking tool.  For this week, I am featuring a favorite tool called a microplane.  I love to zest oranges and other citrus into dishes with this tool.  It is also useful for grating whole nutmeg, and ginger and many other things.  GREAT tool.  I have a small hand held one too that I love for nutmeg!  I ALWAYS use whole nutmeg, and grate it myself.  The flavor is amazing!
PS  Usually I like to use low sodium beef broth, but Stater's only had their store brand.  But the low sodium is way better, I think.

This looks soo good, I can practically smell it. I've decided when I read a wonderful blog like yours by someone who OBVIOUSLY really enjoys cooking and knows how to do it right, that I don't know much at all about it. It would have never even occured to me to grate "whole nutmeg" (don't even know what it looks like or where I'd find it in the store) and I think I put lemon zest once in lemon bars (which did make them wonderful) let alone have a tool for doing so. But everything always sounds soo good I feel like I need to head over to the store and find these things and whip something up, haha Have a wonderful week-end Kris.

I love the idea of adding orange zest to it. I'll bet that really kicks up the flavor. Another great recipe for me to try. thanks!

I had the same idea for soup I mean.
Your soup looks way better than mine. I made tortilla soup. I used a whole chicken from Cosco. It was one we had already finished and I had frozen the carcaus (sp) it made for a great broth. Then I added carrots, cilantro, garlic, rice, can of herdez green chile sauce, l can of minced tomatoes and then I had frozen the meat that was left over on the chicken and added at the end. I put chips in a bowel and added the soup and lots of cheese it was yummy. I want to make yours too!

P.S. Senior Airman is the third stripe in a series of three before you can be promoted to Sargeant (sp) it is early and I haven't had my coffee and my spelling is atrocious (sp) XO Anita

Hi Kris- Thanks for the nice message. I'm feeling a little better today, not so freaked out and I was able to sleep last night. I did get your message about the pumpkins and I am so glad you like them! I might try this soup today...looks so good.

YUMMO! I make beef vegetable barley soup with leftover prime rib after Christmas and anytime I have stew meat as well. I dump it all in my nesco and walk away. It's one of our favs!!

I was actually thinking of you and your gang when I made that post. I though - humm, I bet Kris has a whole kindergarten room of toys and equipment for the grands!
