Feeling Crabby?

For Crab Cakes, that is.  We bought some lump crab at Fresh & Easy and I made some crab cakes for dinner tonight. I looked online for a crab cake recipe, and in some of my cookbooks.  I do have a good one somewhere for a baked cake, but I decided to fry these.  I love the crab cakes we get at Crab Cooker restaurant, and was trying to do something like that.  Now...mind you, I didn't follow a recipe, so it won't be written in true recipe form, but I will see if I can remember all that I did.
Crab Cakes a la Kris
I had purchased only a half pound of lump crab, and most recipes use a full pound so keep that in mind too, and remember to double if you buy a pound of lump crab.
8 oz. lump crab meat
juice of one lemon
handful cilantro, chopped
2 cloves garlic
1/2 onion, finely minced
1 celery stalk, finely minced
1 tsp Old Bay seasoning
1/2 tsp. prepared mustard
1 generous Tablespoon mayo
1/4 cup or so of crushed crackers ( I used ritz crisps)
1 egg
small amount flour
canola oil to fry
cracked sea salt and cracked pepper to taste
Saute onion and celery and garlic in small amount of oil until soft.  Set aside to add to other ingredients.  Combine crab, squeeze lemon into crab, add all other ingredients.  Shape into patties, then lightly dust patties in flour.  Place in oil that has been heated to medium/high heat, and fry on both sides til golden brown.  Serve with plenty of fresh lemon wedges and some tartar  sauce for dipping.

I also made this Broccoli Cheese Cornbread dish from my bloggy friend Jessica's blog. 
She featured it on her blog a few days ago, and shared the recipe.  She said her Mom made it and it looked so wonderful.  I have made something like this before, but mine had bacon and green onion in it.  I followed her recipe, with the exception of using fresh broccoli instead of frozen, and it was SO good!  Thanks Jessica.  Go check out her blog.   It is one of my favorites!
I also made some cookies today.  Chocolate Chip with toffee bits.  I am going to sit down now to have a snack and work on my granny stripes.

oh those crab cakes look good!! you need to share the recipe for that one. or at least just share it with me. or just bring me a crab cake would ya? :)

Kris....I would love the recipe for those crabcakes. I just got back from SC where they had some amazing crabcakes and unfortunately Im now craving them. Can you help a girl out? lol

Did you mean 12 cloves of garlic for 1/2 pound of crabmeat? WOW!! I thought I loved garlic! I have a recipe to share with you for something called BonBon Chicken - great hot weather dish - I'll email it to you.

Yummy...crab cakes are a favorite here. I didn't know Fresh and Easy had Lump Crab...is it canned?
