Pumpkin Spice Muffins

TODAY...even though it was a hot mother chicken.......I turned my oven on and made one of my favorite fall time treats.  Pumpkin Spice Muffins!  SHHHH....don't tell anyone, but it is actually a Weight Watcher recipe, and each muffin is only 2 points.  They are delicious.  Here are the ingredients.
And that's IT!  One box spice cake mix, one can pumpkin, NOT PUMPKIN PIE MIX, 2 apples, cored and peeled, and 1/4 cup water.  Mix and fill muffin tins, or cupcake cases.  Bake at 350 for 20 min.

And...I baked them wearing my new vintage apron. 
LOVE IT!!!  I have a thing for vintage half aprons.  And they must have pockets.  This apron has some cute ric rac detail on the pockets.  And I love the patchwork  on it, and the wide waist band, and darling fabric!!
I have a great vintage/antique shop by me.  I always find something fun when I go in there.  I also found this other apron.  It is completely hand sewn.  Pleats and all.  I did reinforce the pocket by machine, and may also have to reinforce all seams eventually.  But I washed it in hot water, and it seemed to be well sewn.
I love the green gingham, and then whomever made it, used the grid of the pattern to cross stitch little x flowers with black embroidery floss.  It is also darling.  I will be wearing these a lot!  I didn't take a picture, but I made Pioneer Woman's meatballs again tonight.  This time though, I used lean ground beef and some lean sweet turkey sausage.  Oh my!!!  SO good.  I made a meatball sandwich on a roll with provolone for Mr. G for tomorrow.  Poor guy is having a pretty bad night tonight.  He continues to see the acupuncturist two times a week, and he feels some improvement.  But he had to go back on his meds, and he wishes he didn't have to.  It has been over 3 months now, and there has been significant improvement, but not enough.  He is spent at the end of the day, and he does not sleep at night. Pain wears you down, and I hate seeing him like this.  It is just a rotten situation!  But we are still hopeful.    We are heading back up to Big Bear this weekend, and that will make him feel better to be out on the lake fishing for Walter.

Love the recipe and the aprons! Also love Big Bear but the last time we were there was a month before our first son was born-30 years ago. We lived in La Jolla back then.

I don't use water in mine oops, & the last batch I made I didn't peel the apples...I asked Stacey & she doesn't either saves so much time! As long as they're organic b/c the pesticides are all in the skin of apples...& on THAT note...apples hold more presticedes than any other produce item...jus' sayn :)

wow I'm so glad you shared this recipe... I can't get enough pumpkin this time of year and for just 2 pts each I won't feel so bad about it! Hope your hubby feels better soon, surely the mountain air will replenish and relax !

I Love that adorable Apron!!! And I love those muffins too, except I make mine with a chocolate cake mix, pumpkin, apple, and a yogurt! I will have to try them with the spice cake, sounds delicious!
Pain certainly does wear on you, sending well wishes to Greg & hopefully he will be able to get off the Gabapentin Soon!! Enjoy your Holiday Weekend in the Mountains!!!

The cross stitched apron looks a lot like the apron all San Diego girls made in Home Ec in jr. high school...and at 56, some of us still have our aprons!

Here's a sly way to cheat on a hot day and still get pumpkin muffins: use the batter for making waffles. Super quick and the same goes for any muffin recipe. You might want to add a teaspoon of oil if the recipe doesn't have an oil in it. What a time and temperature saving ploy!

I LOVE those muffins.. Erika gave me the recipe last year and I make quite often.. Everyone that I have given the recipe to loves them too.. Poor Mr. G :( I hope the pain subsides soon!

Hi Kris, I tell you most days when I stop by your place you make me hungry...which is good. Today is the same but I also have a gluten free spice cake mix I can substitute and I can't wait to try this recipe.

I am without a doubt making those muffins! Pumpkin is king for me:) I don't wear too many aprons - but the green one could almost make me want to...and, LOL - in the picture of you with your fall apron...looks like you wearin' nothin' but the apron! I know - goofy, I am! Have a great weekend:)

Anything pumpkin is a wonder item in my book! I will have to try these for sure. Cooking is so much more fun in an apron and those two are darling. I'm praying for Mr. G. Hope his pain is gone for good soon. Enjoy Big Bear!

I'm with you, aprons must have pockets. Otherwise I have no place to keep my kleenex, cell phone, etc.

Love the green apron! I tried buying a similar one on Etsy that was beige and had black cross-stitched roosters (my fav) but it sold too quick. I need one for my fair on the 18th, so I thought I'd be a fancy shoppe owner and have an apron to hold the $ I might or might not make. lol. Beautiful aprons!
