Grandma Doris' Muffins


These muffins are wonderful!  I got the recipe from the Mom of one of my dear friends, Sue.  Sue's Mom was the sweetest lady.  Known as "Grandma Doris" to her Grandkids, and to my kids as well.  She made these yummy muffins often, and so do I.  They are a favorite in our house, and my go to muffins for any time we travel and want to take a snack along with us.  Loaded with good stuff.
Here is the recipe:
1 cup margarine or butter ( I use butter )
1 1/2 cups sugar
2 eggs
2 tsp vanilla
1 mashed banana
1 cups applesauce
1 cup buttermilk
2 cups flour
1 tsp baking soda
1 tsp salt
2 tsp baking powder
1 tsp allspice
1 tsp cinnamon
3 cups oats
1 bag semi sweet chocolate chips
Cream butter and sugar together until fluffy.  Add eggs and vanilla.  Add banana and applesauce and buttermilk.  Add dry ingredients, and beat on low just until blended.  Add oats and chocolate chips and stir in by hand.  Scoop into paper lined muffin tins and bake at 350 for 18 to 20 minutes.  Watch closely, and don't let over brown.
These are fabulous, moist, and good for you.  I hope you enjoy them as much as our family has over the years.

How bad can these be? Look at all the goodness in them.

Now, I am here to say that I AM VERY HAPPY to have that Applebee's dressing recipe for that salad. TRULY, I AM! I love it and, like you, haven't been in a long, long time.

Now, as to that sweet little hat for baby Ellie Jo--it's adorable. Does it come in adult sizes? = ),

Now I'm hungry.
