Hello Weekend!

Greetings!  It is Friday!   With a good weather weekend upon us.  I made a Trader Joe's run today.  I want to share with you a dish I made tonight.  I found this Greek Chopped Salad on a blog that my daughter Erika follows, called:
The Fitnessista   I spent some time perusing this blog last night, and came up with a lot of good snack ideas for my quest to lose my winter coat.  This Greek Salad had my mouth watering, and today while I was shopping at Trader Joe's, I picked up what I needed to make it, along with a couple of additions of my own.
Her recipe called for
1 can chick peas
Few grape tomatoes, halved
1 cucumber, seeded and diced
1 red pepper, diced
I also used 1 yellow pepper, diced
Juice of 1 Meyer lemon ( I used a lemon off of my tree, not a Meyer )
fresh mint
fresh parsley ( I didn't use parsley)
2 T hemp oil ( I used olive oil )
fresh cracked pepper
fresh sea salt
I used lots of fresh basil in place of the parsley
I grow mint, and used a good handful of chopped mint leaves
I also bought lemon pepper pappardelle pasta, and cooked this al dente, then chilled under cold running water for this dish. 
The fresh ingredients, along with the amazing fresh taste that the mint and  basil added to this dish, was SO, SO good!!  The pasta made it more a meal. 
And guilt free.  This whipped up so quickly, and I absolutely loved it.  I hope you give it a try too.

I never knew I like garbanzo beans so much by themselves (not just in hummus) till I tried Genny's bean concaction. Yum!
