What's Cookin' Around Here

So, Jake has finished doing all of the little things that were needed to do in order for the motor home to be ready to go to it's parking place, here in the grove.   Last night he came over and he and Greg were going to get it moved to the back.   But......it seems that one of my garden boxes was in the way.  A box planted full of corn, and lettuce and peppers!  What to do...what to do?  While they were measuring and brainstorming, I was fretting and pacing.  Then they began to try to move my garden box.  But it was firmly wedged in, with steel takes driven into the ground to hold it even more secure.  The corn had spread it's roots deep and wide, and it was not going to be an easy move.  Then it hit me!  Simply raise the entire box up off of the ground, leaving the soil intact.  It had been watered daily and was firm.   We relocated the garden box, and then I began cutting the soil and roots to transplant the veggies.  The corn was my main concern.   The three of us carried it to the new spot where the box had been moved, and then began to replant it.  I don't know if it will make it, but I hope so.  I harvested all of the lettuce and just replanted the peppers.

Once that was moved, the motor home fit.  Snugly through the gate.  Greg backed it in, and Jake directed him, and I winced every time he got close to the house!!   So the boat and one motor home and a tow dolly for the motor home are all back there.  But we are going on a fishing trip next week, and then we will be adding another one to the lot!!   So it is looking a little bit like this now.
A couple of years ago, some good friends of ours were coming to visit in their brand new fifth wheel to try her out.  Mr. G made this sign at work and we had it waiting for them!  It was pretty funny.  I saved the sign and dug it out last night and put it in place after they had the RV all tucked in.
I think Jake got a kick out of that.  This next picture is taken from the back of the grove, looking towards the boat.  You can't even see it from back there. 
Last night, I wanted to use up the figs that my neighbor gave me, so I made another fig pizza.  This time on regular pizza dough.  Only I split the pizza in half.  One side was fig and goat cheese again, with a pesto sauce, and topped with fresh arugula and then drizzled with pomegranate balsamic and fresh parmesan.
The other half was red sauce, mushrooms, black olives and fresh mozzarella.  We topped this with spicy arugula too.
 If you can get your hands on some nice fresh figs, I hope you will try this delicious flavor combination in a pizza!!!  It was devoured for the second time in a week! 
Tonight I made home made granola.  I used a recipe from this beautiful blog.

Check her side bar for recipe.  She also has a great gift giving idea for this.  She puts it in a nice big glass jar and uses a pretty tea cup for the scoop.  I love that.  I can't wait to put mine in a jar and add a cup!  So pretty.  And what a nice gift to give too. 
I changed it up a little bit, by adding raw sunflowers to mine, as well as a generous amount of pumpkin pie spice.
 It smelled amazing while in the oven, and tastes even better.  I just had some on my yogurt.
 I am afraid I have some not so great news today.  It seems that Snacker has had a relapse, and today is not
doing well at all.  I have separated her in her own spot for tonight.  I have them all back on meds.  I don't know what to think.  She was doing so well.  Eating, foraging, all of that.  Then today, she is lethargic, and seems to be congested a little again.  Her comb which was once a beautiful brilliant red, and stood tall and large with 5 pronounced peaks, is now a dull, shrunken and shriveled spec of what it used to be.  They say a chicken's comb and wattle are a window to their health.  This is not a good sign at all.  I realize that if I am going to have chickens, and enjoy the process, that I have to learn that there will be some loss too.  But Snacker, she in no ordinary chicken.  She is a pet.  I am so concerned.  But I know that I have done all that I can do.  I am also worried about going out of town next week.  I hope that I can count on my son to take proper care of her and the rest of the girls. 
The weekend is upon us.  Father's Day on Sunday.  We will honor the Dad's in our lives, with a bbq and family time.  And I shall be thinking of, and missing my darling Dad, who lives in my heart, every single day.

You've been busy! I hope your veggies make it! I love the RV sign. That is too cute! Your pizzas look AMAZINGLY good! I want one. lol (P.S. Do not read blogs while hungry. =)) I'm going to have to try the granola! Also looks yummy! Poor poor Snacker!! I hope she feels better fast! I'll be thinking of her! That was a whole lotta work to add just one motorhome. Bet you're glad you're done. I'm so so sorry to hear Snackers isn't doing well. Keep us informed.

Good morning Kris! I somehow missed your previous post. I think sometimes things just move sooo fast on my sidebar, I miss them. Anyway, how neat the story was of your grandmother. I love that she got down on the floor with Noah. And impressed! How wonderful she is soo active and healthy. And YAY on the job finished for the motorhome. The sign was a hoot, and something my hubby would have done. Hope your corn does OK. Your pizzas always look to die for. Soo yummy. I am afraid I'd eat WAY too much, haha. Poor Snacker...so sad. Hopefully she will recover once again. ENJOY your week-end with your family, and may the Lord flood your heart with wonderous memories of your dad. HUGS!

I hope the corn makes the move alright. I think the peppers would be fine. I love fruit on my pizza also, but usually use fresh pineapple, paired with salty black olives. Yummy!

Love the rv sign in the grove! Looks good. We're so lucky you and Dad are nice enough to let us store that at your house!!!

Oh no, I'm sorry about Snacker. I wonder why she got worse again.
I know father's day is always a little sad for you, I'm sorry. I am glad you will be surrounded by all of us. Love you.

OK Kris, I have to come over and visit your home. It is just too inviting. What fun.

We had to give our 5th wheel to our daughter because the city widened our street taking away 10 feet of our driveway. The redo made our driveway too steep for us to get our 5th wheel up onto it's parking place in our side yard. Bummer huh!

I'm sorry to hear about Snackers...that is the one thing that is holding me back from getting chickens...I get so attached. I hope Snackers will get better soon!
You must be the best cook...your food always looks so wonderful!!
