Tomato Pie-Oh MY!!!!

Howdie do.  My Nana says that.   She is Southern.  I love the way she talks.  This post isn't about Nana, but it is Southern.  I originally saw this recipe on my friend  Niecee's blog You can go to her blog, and you will find that she posted the original recipe from another fellow blogger named Teresa.   Teresa's Blog is an awesome blog too.  She lives on beautiful Bainbridge Island, and has  a Wheatie like ours.  Only, hers is a star!!  He was in the play Annie!!!  Anyway, both of these ladies have wonderful blogs, and you should visit them.  But the recipe is called Tomato Pie.  It was everything Teresa said it was.  For the exact recipe, go to either of the blogs I mention to find it.  I am not so good at following a recipe exactly.  Here are some pictures though. 
The tomatoes were not from my garden.  My friend and neighbor Jane gave them to me.  They were nice and plump and flavorful, even though they were not home grown.  You will need some sweet Vidalia onions, which are a must! Some mayo,  a bunch of fresh basil, some parmesan, sharp cheddar cheese, and a premade pie crust.  A little salt and pepper, and that is it.  Let's cook.
 Roll out your pie crust, and then poke holes in the bottom with fork.
 You don't need that many.  I don't know why I went that crazy with my fork?  Put crust in the oven for about 10 minutes at 350, or until golden brown.  Meanwhile, slice up your tomatoes, place them in a colander over a bowl, or in the sink, and sprinkle some sea salt on them to sweat out some of the moisture.
*Note:  I suggest that in addition to salting and sweating the maters, you apply some pressure to them while in the colander, to release some more of their moisture.
Also cut the onions into thin slices.  Use as much or little as you like. I used one large onion sliced thinly.   Chop 1 cup of fresh basil.   Grate  2 cups cheddar cheese, and add 1 cup mayo ( I used a bit less mayo )  Season with salt and pepper to your taste.
When crust comes out of oven,  turn oven up to 375 and then begin by layering half of the onion slices into pan, then top with half of the chopped basil.  And begin to layer tomatoes.
Keep layering tomatoes ( I used three large tomatoes in total )  Then top with the rest of  the basil and more Vidalia onions if desired.
Top entire pie with the cheese/mayo mixture.  Then add parmesan cheese.  Recipe called for 1 1/2 cup, and I only used about half of that.
Pop it back into the oven for 45 minutes.  I would also suggest putting the pie plate onto a cookie tin to avoid bubbling cheese spilling over. 
Allow pie to set up before cutting.  About 10 minutes or so.  
While the pie rested, I grilled up some yellow squash and zucchini from my garden.
We do these a lot on the bbq.  But since I was cooking inside, I used my indoor grill.  I love it. It is a cast iron Lodge grill. 
I slice the veggies in half lengthwise.  Drizzle with a little olive oil, and sprinkle with fresh ground sea salt and pepper.  Get your grill pan screaming hot.  Lay the veggies flesh side down.  Don't move them.  Let them caramelize and get those nice grill marks on them.  We like them barely fork tender.  This won't take long at all.
The tomato pie was AMAZING!!!!  So fresh and delicious!  You've got to try this meatless dish!!!   I can't wait until my tomatoes are coming in.  I know I will be making this again and again!!!  Two thumbs way up.  Thanks Neicee and Teresa!!!  The next I make this, I think I will layer some fresh mozzarella slices over the tomatoes and onions and basil, instead of the cheddar and mayo mixture.  A caprese pie!  Yum!!
While I was making dinner, Erika was out at the pool with Noah.  I could hear lots of laughter and yippees.  I had brought the Little Tikes slide over to the pool deck for the kids to slide down on.  He was having a good ol' time!!!

We just leave the hose on a little trickle and they zoom down the slide into the water!!  Summer is in full swing here at Camp Runamuk!!!

My family LOVES tomato pie. My recipe is a bit different from yours. Will have to change it up a little this year when the tomatoes come in.

I've been making a tomato pie like this for the past few years. It is amazing..and if you add mozarella it will taste like pizza, especially if you season it with basil and oregano.

That looks so delicious, can't wait to give it a try. I will have to wait for my garden tomatoes first, the ones in the store around here taste like styrofoam. I will also use mozzarella cheese.
I enjoyed fresh mint from my garden in my smoothies this morning and I have plenty of basil growing for the tomato pie recipe:)

When living in Indiana I visited a quilt shop in the area that once had a tearoom. I would usually stop there for lunch when I shopped. One popular lunch item was their Shaker Tomato Pie. Later they published a cookbook and it has their recipe so I began making the pie at home. It calls for canned tomatoes and they turned out nicely too. I haven't made it with fresh but will try to this summer. I love the taste of tomato pie altho the name doesn't sound all that tempting, actually. I used to make it for a ladies' group I entertained and they loved it.
Oh how I'd love to live near enough to be in your group too but the hike from IL to CA is a wee bit too long.

How funny... while I was reading through your tomato pie recipe, I was thinking that mozzarella would be a healthier option over the cheddar/mayo mixture. Great minds think alike! :)

I had a simliar favorite from Bisquick but it does not have mayo and parmesan for a crust...

Oh Kris I can't wait till my tomatoes, onions, basil and squash are ready to harvest. I am saving this post so I can get the recipe when the time comes. The pie looks so yummy! Kris, As always your dishes look delicious. If my girls get an over abundance of tomatoes we will make plenty of these.
