Pretzel Rolls

I came across this recipe for Pretzel Rolls on Pinterest.  It is a King Arthur recipe.  I have made many of the King Arthur breads, and they are always good.  So I was pretty certain this would be too.  It wasn't just good.  It was a,  two thumbs way up, winner!!!   I like to store things in glass jars on open shelving in my kitchen.  I love these chalk labels!  My first were purchased online.  But the other day, I found some in the dollar bin area of Target and bought the last two packs that they had.  I love them!  So easy to erase and change, as you need to.  I gathered up my ingredients and got busy.
 
You will need a mixer with a dough hook for this recipe.  Or, you could use your bread machine and remove the dough after first rise.
Noah loves to help me in the kitchen.  He washed his little hands, and pulled up the yellow kitchen stool, and became my Sous Chef.  Or, as he likes to call it, my " Co Chef."
After mixing the dough for about 5 minutes in your mixer, place in large greased bowl, to double in size.
Then, once doubled, remove dough to a lightly greased board and lightly punch down.
Divide dough into the number of  pieces you would like to make.  I made mine into 16 pieces.  Divide dough, and gently roll each piece into a smooth ball, using your hands.
"Like this Gamma?"  We didn't worry about getting them too perfect.  After rolling balls, place onto lightly greased sheets.
Cover trays with towel and let dough rest for 15 minutes.  Meanwhile, prepare your water bath.  Using a large pot, bring water to boil.  Check recipe below to see how much baking soda and salt to add to water.
After "resting" dough, using a slotted spoon, drop a few dough balls at a time into boiling water.  Leaving in water, for 30 seconds, each side.
Flip to other side.
Remove with slotted spoon onto towel for about a minute.
Using clean kitchen shears, snip an X into top of dough, and sprinkle with course sea salt.  Place back onto lightly greased sheets.
Bake in a 400 degree oven for approx. 20 minutes.
Remove from oven and place onto cooling racks.  However, I have to warn you, that you will be removing these while still hot, and slathering with butter, to taste immediately!!
Noah got in on the taste testing too.  I believe the look on his face says it all!
He ate three!!!  And I ate...uh...I lost count.
These do take a little bit of time.  But you will be so glad you made them!!!  Noah said to me, " Gamma, you should open up a restaurant, and sell these for 20.99, and I will be your little waiter!"  I love it Noah.  Let's do that!!  I am not so sure about the 20.99 for one pretzel roll, but we'll see.

Pretzel Rolls
I made these on Wednesday.  I never cook dinner on Wednesdays because Greg plays softball that night, and doesn't eat.  So I take the night off.  But, he got home that night, and said his game was cancelled due to rain.  He said, "let's go out to eat!"  You don't have to ask me twice.  Off we went.  I have been craving Thai food, so we went to a local Thai restaurant near us.    We started off with Veggie Spring Rolls and Peanut Satay Dipping Sauce.
Oh my goodness, were these ever good!!!
We both had a Pad Thai dish.  Mine was with Shrimp and veggies on wide noodles.  Excellent!!!
On Thursdays, Greg is working from home now.  I made us a fried egg sandwich and Canadian Bacon and jack cheese, on buttered toasted pretzel rolls.
Greg said that these beat the heck out of our usual fried egg sandwiches on sourdough English Muffins!  I have to agree. They were divine!  Today in his lunch, I packed two Canadian Bacon sandwiches on Pretzel Roll, with cheese, lettuce and good grainy mustard.  We got a lot of mileage out of these pretzel rolls.  They were delicious straight out of the oven.  Then with fried eggs sandwich.  And the next day with a cold sandwich.  I will be making these again very soon.
Last night I made a quick and easy dinner that my Nana used to make.  Tamale Pie.  Using canned beef tamales, and canned Chili without beans.  Topping with sliced black olives, and jack cheese, and crushed fritos.  Bake at 350 for about 45 minutes.  Cover with foil, and remove foil last 15 minutes of bake time so you don't burn the cheese.
Right before it went into the oven.
It was just as delicious as I remember.  And it made me think of my dear Nana, who we all miss so much!  I served it with a salad, and that's it!

Well now! You have me craving pretzel rolls! You make the most delicious looking food and with a helper like yours, you just can't go wrong can you? Your Thai food looks really good too. Hubby and I are off to the lake tomorrow to stay the night. Yippee!

Yum, yum, yum! I've made pretzels before with that same water-bath method. These look really good! That egg sandwich using them made my mouth water. I've made something similar with the tamales too, but I wrote this one down to try soon.

What a fun post. I love the look on Noah's face when he is tasting the roll. I'm not quite up to making them yet but I plan to when I'm a bit stronger. However, I could manage that tamale recipe. Thanks for the idea. Poor John is getting very tired of being our Chef. I think he will be delighted with your Nana's recipe.

Oh my goodness.. I love pretzels and I love rolls and homemade bread so those look out of this world! I might have to try them when I get home from Ohio. We went antiquing today and to a historic inn for lunch. But I'm homesick and miss my own bed now.. I'll be flying home on Tuesday. I'm so glad to see you've got your blog mojo back!

Love pretzel rolls. i used to find them at Target. Maybe it was hit and miss but I haven't seen them in awhile. I am really tempted with your recipe!

Oh my word, that tamale pie looks amazing. I've made it before just using chili, cheese, tomatoes and cornbread. I never would have thought to actually use tamales for the base. I am going to make this. The pretzel rolls look amazing, and I know I'd eat them all! And, I can never pass up Thai food. Love your food posts! xo
