Mama's Salmon

Hidey Do!  I am back in less than a week, as was my intent and plan.  Just a quick post today.  I MUST share with you cooks out there, a simple, yet ever so delicious recipe that I got from my Mom.  Very much a "company" worthy meal too.  However, it takes very little time to prepare.  All prep can be done ahead.
You know those lovely salmon halves you see at Costco and Sam's?  Get one of those.  Our family is large, and we are big eaters, so the bigger, the better for us.
Preheat your oven to 375 degrees.
Remove salmon from package and place onto a large jelly roll pan.   Drizzle with olive oil, using clean hands to smear over surface.  Lightly salt and pepper.  Chop one whole bunch of fresh parsley.  One bunch green onions, and one bunch fresh dill.  PLEASE don't use dried herbs.  This makes all the difference in the world.  Mix herbs and pat onto entire surface of fish. 
I cooked mine on the top third of my oven, and depending on how done you like your fish, anywhere from 15-20 minutes.  I prefer mine a bit more done, and I did the entire 20.  Mom likes hers a bit less done, and she does about 15. 
Also Mom's recipe, is this roasted cauliflower.  Oh my!!
Clean and cut one head of cauliflower into florets.  Mix about 1/4 cup of good Dijon Mustard, with either a little mayo, or non fat greek yogurt.  About the same amount, or whatever looks good to you.  I also squeezed the juice of one half lemon into this.  Salt and pepper, and then drizzle sauce over top.  I cooked it on rack just beneath the salmon for same amount of time, and it was perfect.
Comes out of the oven with nice little roasted tops.  The flavor is so good.  Very low calorie.
I made a mixed salad of romaine and baby arugula.  Fresh bleu cheese dressing, and shaved some Toscana black pepper crusted cheese on top. 
Oh Mercy, as Nana would say.  So fresh!  So delicious!  And SO fast!!  I hope you will try it.  I just had it for lunch too, with a little bit of leftover brown rice.  Just as yummy!!
My Mom is a fabulous cook.  I get my love of food and cooking from her!  We enjoy taking cooking classes, and talking about cooking and restaurants, everywhere we go.  Do give this a try, and let me know how you like it.
I ran into my LQS (local quilt shop) this morning.  The owner asked me to make a shop sample.  So I took home this lovely new fabric by Bonnie & Camille, called Vintage Picnic. 
Oh it is  yummy!!
She needs it ASAP, so I will get going on it today.  Hubby is out of town on business for a couple of days, so I will have a lot of sewing time.  When I finish the quilt top, Diane at the shop will long arm quilt it, and I will take it home and bind it.  It will hang in the shop while the fabric line is being sold, and then when they are finished with it, I get to bring it home and keep it forever!  Good Deal!!
I also bought a bit of fabric to do a couple of project bags with.  This fun Spring print.
And from the sale rack, this large print floral on brown background, with ice blue for the inside.
Yesterday when I was at Walmart, I spotted these pretty leatherette reversible bags.  The red ones were all put on clearance for 7.00, along with a few other colors.  I bought one, and hope to try an embroidery design on it.  If it works, I am heading back to clear them out of all of them. 
The scale is not right in this photo.  The purse is actually quite large.  So stay tuned to see how the embroidery comes out.

That looks delicious Kris. I'm going to have to try that next time I get to Costco and get some salmon. And what a deal on the quilt! How fun that you get to do something you love and have the materials provided. And then to top it off you get to take it home and keep it. I'll be curious to see how the bags turnout. You could have quite a little business making those. Have a wonderful afternoon my friend. It was good to see you back so soon. I miss you when you're gone.

We love salmon and roasted cauliflower so this version is a must try for me. I wish I had someone close who loved to cook as much as I do so I'm glad I have you my virtual friend to try things with! I'm dying to see how the embroidery on the purse turns out so do tell - good, bad or indifferent I'll be interested.

That salmon does sound delicious. I use the general rule of cooking fish for ten minutes per inch of thickness and it works to our taste. I will certainly try your recipe!!

Good morning! Well I tell you salmon is probably my most favorite meal right now! And those costco ones are really hard to beat...soo yummy. We usually bbq ours, but I have not tried your herb topping and I am definitely going to give that a whirl.
And then how exciting to get to make a store sample and then keep it! win win. I am loving that fabric. I am curious too how your embroidery will come out so I am keeping tuned for sure, lol. I've SOOO much on my sewing table right now that I am a little overwhelmed, lol, but I just do the best I can every day to get it done. Have a good day Kris!

I just saw those purses at Walmart yesterday....they had pretty aqua ones too but ours were not marked down to $7! I look forward to seeing what you create with it!
I wish I liked salmon because I know it's so good for you...and yours looks straight out of a cookbook! I do love cauliflower though and I am definitely going to try it with your mixture over it...I even have a head of it ready to go in the fridge- might try that tomorrow!:) Thanks for sharing!

Kris.. you should be proud to be asked to make a sample project for the LQS! It means you are very good at what you do! I bet that salmon and cauliflower was delicious! We got an Instant Pot and are learning to make meals in a pressure cooker. ((hugs)), Teresa :-)
