Recipe for Eclairs (sort of)


Here is the recipe for the chocolate eclair dessert that I posted the picture of earlier. I found this recipe on the internet, and it may have even been on one of the many blogs I follow, but I can't remember. It was a huge hit, and it really tasted exactly like a chocolate eclair!!!
15 graham crackers, broken in half (30 squares), divided
1 1/2 cups milk
1 pkg. (4-serving size) Jell-O vanilla flavor instand pudding and pie filling
1 tub (8 oz.) Cool Whip whipped topping, thawed
1 cup chocolate ready to spread frosting
Arrange 10 of the graham squares, overlapping slightly, in bottom of 8 inch square pan, set aside. Pour milk into large bowl, and dry pudding mix, and beat with wire whisk 2 min. or until well blended. Let stand 5 min. to thicken. Gently stir in whipped topping with whisk until blended. Spread half of pudding mixtue over graham squares in pan. top with 10 of the graham squares and remaining pudding mixture. Cover and refrigerate at least 3 hours. Spread chocolate frosting just beore serving.
Note: I doubled this recipe, and used a 9 x 13 pan. I see no reason why you have to break the grahams. I did not use name brand grahams, nor pudding, nor whip topping. And I frosted it before leaving for our party, so it was assembled and stayed in the fridge until we served it. Cut into squares, and enjoy!!! This is sure to be a hit!

Thanks for posting this recipe. I love chocolate eclaires and this looks like a good, quick way to accomodate my craving. I'll definitely try it!

I'm envious of you having your grandchildren close by. I can never get enough of my little grandsons and there is always too much time between visits even when I go 4 times a year. (By the way, I'm flying out this weekend for a weeks with the kiddos. YIPPEE!)

These look delicious, I'm going to make them and pretend like they are a weight watchers recipe so that I don't feel bad eating them, one point per serving anyone!!
