Goodbye Dreamy Hot Cocoa, Hello Fit Kris



My posts about food are about to drastically change! No more dreamy hot cocoa, or ooey-gooey gorilla bread, or sugar laden chai tea, or dinners full of carbs and calories. You see, this once trim Weight Watcher has gone fluffy! Yep, me and Oprah! So, along with millions of others who start the new year off with promises to lose unwanted pounds, I am jumping on that bandwagon. Also, my friend Sharon, at Red Geranium Cottage is hosting a Diet Challenge. So if you're interested, check it out and have her put your name on the list. Mondays are going to be recipe posting days for this group. So for today, I am posting one of my favorites for a sweet tooth. I am THE biggest cookie monster in the world, and I love sweets. So this one was a life saver when I was needing a sweet fix, and still trying to fit it into my points for the day.
One Point Chocolate Muffins
Servings-24 muffins
3 cups All Bran cereal or similar type
2 cups water
1 1/2 tsp. baking powder NOT soda!
1 box Betty Crocker or other similar LO FAT brownie mix
Soak All Bran cereal in water for 5 minutes. Add the baking powder, stir, and add brownie mix and stir well. Place in muffin cups or papers. Bake at 350 degrees for 20-25 minutes.
For an extra treat, top with dollop of fat free or light cool whip
ENJOY!
Oh, I lied, I am posting two recipes today.
This next one is for a pumpkin muffin, loaded with flavor and fiber and is moist and sweet and satisfying.

Pumpkin Apple Muffins
1 box Spice cake mix
1 15 oz. can pumpkin puree, not pie mix!
1-2 apples, cut up into bite sized pieces, skin on or off
1/4 cup water
Bake @ 350 degrees for 20 min.
I believe these are 2 point each.

Those Chocolate Muffins sound great! I have started making my breakfast pie with the oatmeal crust - I always used apples as a filling but have recently started using blueberries. We really enjoy the piece of pie for breakfast! 2009 is also going to our year to take off the weight we have added during the past year. It sure goes on easier than it comes off!

I put blueberries in my oats almost every morning. Love them!
The weight sure does come one easier than it is to take off! HATE that!

Kris is there room on the band wagon for me? I am ready to shed this unwanted fluff. Those spice muffins are my favorite and a total life saver. I am in.

Both of those muffins are the best, I love when my Mom makes them. The chocolate ones are really good like you said when you're craving chocolate.

I too will be going on a diet and as soon as we move into our house, I'll be running early in the morn, gotta get rid of the baby body. Too bad sexy isn't flabby and loose huh?

I really got lax during the holiday...averaged about once a week at the gym and ate pretty much what was around (which were lots of no-nos) but I'm getting back on the wagon too. Getting back to a routine will help.

Now that all of the treats are out of the house (yeah, I ate them all) and I'm back in to a routine, I'm ready to start eating healthy again too. Good luck!

I will be making these muffins. I love muffins in the morning with tea. I left a great Sundae recipe for everyone.. it's 3 pts. I like to reward myself at the end of the week so make sure I have 3 pts. Have a great week!

Good luck to you! But I will mis all the yummy treats and recipes. I guess once I have the babies, I'll jump on the bandwagon too and have to make weight watchers stuff!
