Meltaway Monday


Well, this week I can only report a one pound loss. We had a wedding to go to on Saturday, and I ate all the goodies!!!! So....going into week two with a little less of me, but not much.
Here is my weekly recipe to share for those on the Diet Challenge with Sharon. It is a Weight Watcher recipe for Turkey Chili, and my family and I love it, and this is the only way I make chili anymore.
One Point Turkey Chili
10 oz. extra lean ground turkey
1 onion
2 cans 28oz. diced tomatoe
2 med. zucchini, diced
2 med. yellow squash
1 15 oz. can black beans, rinsed and drained
1 15 oz. red kidney beans, rinsed and drained
4 stalks celery
2 cans lo sodium beef broth
2 green peppers, diced
1 pkg. chili seasoning
Soften onions in pan coated with cooking spray. Add turkey and brown evenly. Add rest of ingredients, and let simmer until veggies are tender.
About 1 hour.
I like to put a dollop of fat free sour cream in each bowl, and a sprinkling of parmesan cheese, and a few tortilla chips. If you are finding yourself with extra points, you can add a few slices of ripe avocado too.
1 point, per cup of chili w/o extras added to it.

Congrats on the pound loss after a wedding - that's good!

I make my chili with ground turkey breast too. No one even knows! LOL

Although I am not a fan of ground turkey at all, when Genny made this chili, I loved it! It was very tasty!
