I made this potato cheese soup last night, and it was the easiest and fastest thing! Delicious for a rainy day. We had it for lunch today and it was even better! All you need is: One box Au Gratin Potatoes, 2 cans chicken broth, 1 1/2 cup water, about 2 cups cheese,( I would have used a sharp cheese had I had it, but the mild cheddar was fine too ) 1 pint cream or half and half, and three fairly large potatoes. Cube potatoes, add to pot, pour in all except cheese. Bring to boil and reduce to simmer. Put lid on and let potatoes soften, stirring occasionaly. Season with salt and fresh cracked pepper. When potatoes are soft, about 45 min to 1 hour, add cheese, stir and serve with more cracked pepper. Delish!
