Oh La-La

Yesterday, the aromas coming from my kitchen could have been just like those from any little cucina in Venice or Assisi. But today, we are in a little Bistro in France making Quiche.....
Let's get cooking....first, I cooked the bacon in the oven to avoid splatters all over my stove top. I layed the bacon on a rack in a cookie sheet, and baked at 400 for about 20 minutes, until very crisp. Oh, check out my Ov Glove! Love it!
Henry's had nice little asparagus yesterday, so I steamed up a bunch of those, til barely done.
Here is my cute little quiche pan. I got that when we were first married, 30 years ago. It matched the set of dishes I had from JC Penney, called Wildflowers. I loved those dishes! Wish they still made them.
I made the dough from scratch.......er....bought the dough in a box at Von's, and rolled it out onto the quiche dish.
Voila...the dough adheres to the scalloped edging of this dish and makes such a pretty crimping.
Now, I made two quiches, and on the first one, I prebaked the shell about 10 min. and covered the tops with foil to prevent from over cooking. I did not do this on the second one, and found that it made no difference at all. So you can skip this step to save time if you want to.
Wish you could smell this coming out of the oven. I baked it for 45 minutes at 350. Make sure knife inserted into center comes out clean.
Guess what we are having for dinner tonight? I am bringing one quiche out to my Mom's to have dinner with her. I will make a garden salad to take as well. The second quiche, I will bring to my friend Jae, who is going in tomorrow morning for back surgery.

Quiche by Kris:
One prepared pie crust
About 5 to 6 strips crisp bacon
1/2 onion, sauteed in tiny amount olive oil
handful fresh mushrooms
one large, or two small tomatoes
steamed asparagus
cup or so of shredded swiss cheese, or any sharp cheese you like
4 whole eggs and 2 egg yolks
2 cups 1/2 & 1/2
salt and pepper to taste
freshly grated nutmeg
Roll out dough, place into dish, crimp edges. Place bacon, tomatoes, mushrooms, asparagus, onions and cheese into dish, mixing it up a bit.
Mix eggs, add seasoning, and nutmeg to egg mixture. Add 1/2 & 1/2 to eggs and pour over other ingredients in dish. Bake at 350 approx. 40-45 minutes, or when knife inserted in center comes out clean. Cool to set up a bit, and slice and serve with fresh garden salad.
I did not use a recipe, just sort of made it the way I like it, adding fresh available ingredients. You can change this up many ways. Ham, spinach, etc. I used different veggies in each one, and even added a little fresh jalapeno from my garden to Jae's, as she loves spicy food. And in hers, I used scallions instead of yellow onions, and no tomatoes, and a different cheese.

It's been a long time since I've had quiche. In fact, I'd forgotten about quiche. Now I'm going to have to make me one...my mouth is watering!

I love Quiche, and those look Delicious! I love that your still using the same dish that you were given 30 yrs ago for a Wedding Gift, that is Wonderful!
Give Aunt Diane a Big Hug for me! Any update as to when she might be out of that cast?

Maybe none of my kids will fall out of the cart this time. ;)

I also think it is neat that you are using a quiche dish from your wedding gift. I do not have a quiche dish. I'll have to get one.
