Let's get cooking....first, I cooked the bacon in the oven to avoid splatters all over my stove top. I layed the bacon on a rack in a cookie sheet, and baked at 400 for about 20 minutes, until very crisp. Oh, check out my Ov Glove! Love it!
Quiche by Kris:
One prepared pie crust
About 5 to 6 strips crisp bacon
1/2 onion, sauteed in tiny amount olive oil
handful fresh mushrooms
one large, or two small tomatoes
steamed asparagus
cup or so of shredded swiss cheese, or any sharp cheese you like
4 whole eggs and 2 egg yolks
2 cups 1/2 & 1/2
salt and pepper to taste
freshly grated nutmeg
Roll out dough, place into dish, crimp edges. Place bacon, tomatoes, mushrooms, asparagus, onions and cheese into dish, mixing it up a bit.
Mix eggs, add seasoning, and nutmeg to egg mixture. Add 1/2 & 1/2 to eggs and pour over other ingredients in dish. Bake at 350 approx. 40-45 minutes, or when knife inserted in center comes out clean. Cool to set up a bit, and slice and serve with fresh garden salad.
I did not use a recipe, just sort of made it the way I like it, adding fresh available ingredients. You can change this up many ways. Ham, spinach, etc. I used different veggies in each one, and even added a little fresh jalapeno from my garden to Jae's, as she loves spicy food. And in hers, I used scallions instead of yellow onions, and no tomatoes, and a different cheese.
