The Great Pumpkin Lights The Night

Here at our house, we know it is really Fall, when the Great Pumpkin light goes on the house. We have had our unique pumpkin light for many years. They are one of a kind, and only my parents and brothers and I have them. They were 76 Ball signs for a gas station at one time, and someone my Dad knew cut them in half and made them into these jack o lanterns lights. We always put ours up the first weekend in October, and keep it lit every night until after Halloween.
This full Harvest Moon couldn't be more fitting for our very first cool and fall like day!
Our little people were here this afternoon, and they shared a big pot of potato cheese soup with us. It was delish!! Here are the girls all cuddled up after their baths with Jake. What cuties!!

Being our first fall like day and all, I had to make these delicious harvest muffins. They are a favorite Weight Watchers recipe of mine, and I make them often. All you need is 1 box spice cake mix, 1 can pumpkin, NOT PIE FILLING, 1/4 cup water, and two apples, any type, cored and cut into bite sized pieces. Mix and bake at 350 for 20 minutes. Moist and yummy and VERY low in fat and calories.

Happy Harvest, from the land of endless summers and triple digits. Thank heavens we seem to have moved into the cool and breezy days of Autumn.

I just asked you for your potato soup recipe on my blog, so I will ask here too? And how ironic that you add pumpkin to that cake mix. I add pumpkin to a devils food cake mix along with two yoplait yogurts, wonder if it's a spin off of yours. It's lowfat and full of fiber! I'm going to try yours this week!!!

Oh Kris, I am excited too to FINALLY have a cool breezy fall day. I LOVED it. The muffins sound good and look yummy. I will try those for sure. Don't ya just love little ones fresh from their baths, all cuddly in their jammies?? Have a GREAT day!

Those muffins sound great! I will try them. I LOVE the recipe you posted a long time ago for the WW brownies with All Bran. I keep them in the house all the time. I make a batch and freeze most of them. I eat one for breakfast most days. These pumpkin muffins would be great with some walnuts! We too are enjoying the cooler weather - it is great to sleep with the door open again.

Helen, those brownies are a staple here in our house too. Love them with a dollop of fat free cool whip on top for a real treat! I am trying to get back in the swing of WW again. Gotta look pretty in my mother of the bride dress!

Yay for cooler weather. October 1 came with 90 degree temps and today it will be in the 70's. Hallelujah. Happy Fall!

Ooh, ooh, ooh, I love those muffins!! They are so yummy and I love that they are weight watchers!! Mmm, have any left?

Hi Kris... I just bought stuff to make those muffins too. I love them, great post. I am so into Fall right now and the smell of those muffins will just add to the excitement of these lovely cool days. I was actually chilly last night.
I love the great pumpkin...I always look forward to seeing him. Cute pics of Jake and the girls too. Hope we can do a school night this week......eh?

How is it that I do not know about these muffins? Maybe because everyone eats them all before I get my hands on any??
