Nana's Chicken

My Grandma....we call her Nana, has made this chicken for us many times.  We just call it "Nana's Chicken."  It is the kind of meal that when you walk into the house to smell it cooking, you just feel all warm and fuzzy inside.  It makes me think of my Nana, with love.  It smells so good a cookin',( Nana is from Texas, and she really talks like that ) and it tastes delicious!!  I always use chicken thighs, because Nana did.  I think thighs have more flavor too.  I remove the skin.  Season with cracked sea salt, cracked pepper, and garlic.  Brown them in a couple Tablespoons of butter. I like to use my Le Creuset Dutch Oven for this dish.
Dice one large onion, and several ribs of celery.
Saute this in a couple Tablespoons of butter.  YES BUTTER!!  The flavor is so much better!!
When translucent, pour this over the browned chicken thighs.
Along with about 1/2 a can of chicken broth.  And several teaspoons of capers.  YOU MUST have the capers!!! 
Turn the heat down to simmer, put the lid on the Dutch Oven, and let this wonderful aroma fill your house.  In about 90 minutes, you will enjoy the most flavorful and tender chicken ever!!   This is not a good picture, it looks too yellow. But trust me, it was delicious!  I reserved the rest of the chicken broth to use as my liquid for my risotto.  And then steamed some fresh butternut squash and grated some fresh nutmeg over the top.  So yummy.  So there you have it.  Nana's Chicken!!!

And this is Nana!   She is the one on the left.  And my daughter Erika on the right.  She looks a lot like Nana.
Nana is 96 years young.  We love Nana.  And we love Nana's chicken. I promise you will too!!!

That looks so good. I have to be honest, I have never, ever cooked with capers. I wouldn't even know where in the grocery to find them. Your daughter is beautiful!

I love slow simmered dishes like this, especially when they have such good memories associated with them. Your nana and your daughter are beautiful.

I read on Pam's blog that you have avocado trees in your backyard. You lucky girl - what I wouldn't give to have one in mine.

OMG ... you know how much I love Nana's chicken and Nana of course. It is the perfect time to make that again. I use chicken breasts but I think Kevin would prefer those good lookin thighs.

What's your schedule like this week...quicky lunch on Wennesday maybe?

Morning Kris, This recipe looks so delicious and one I can eat because there is no flour or breads in it...will write it down for next week as we have close friends coming for a visit from Ca.
Your nana looks like such a dear and your daughter does look like her. You are very lucky to have your nana as well as your mom.

Yum!! I LOVE capers, this is right up my alley! I'm so excited I only have one more order for after Thanksgiving, maybe 3 this week (or none) and then I get to cook my little heart out for the rest of the year! I have missed trying new recipes so much, I told Tim he better be ready to fatten up!! I will definitely be trying this one! And that squash looks so good! I think a butternut squash soup is calling my name! Now I just have to find my recipe! Happy Monday Kris!

Oh Sweet Nana! She makes pretty good fried chicken too! Every time I have Chicken, Lemon Meringue Pie, Potato Salad, Chocolate Chip Cookies, & Grapes I think of Nana ;)

Oh I forgot why I was here!!! Kristy, my oven at my new house has the temperature set way too high, 350 degrees is really 450, do you know how I can adjust the temp?

You know Mom, I think Nana did add kalamata/green olives. But I don't like them. I have always done the celery and onion, and lots of capers. Mmmmmmmm!!!
