A Perfect Sunday

We woke today to sunny blue skies, and gentle breezes blowing through the window.  We began the day with this.
The orange trees are loaded with huge, sweet, drippy, sticky sweetness!   They are at their peak right now, and we will be enjoying fresh squeezed juice until May.  Oh how I love this season!
I saw a dish recently on a blog, and for the life of me, I cannot remember which one it was.  I even went back and looked on all of my favorite cooking blogs tonight, so that I could mention the blog where I saw this.  But I couldn't find it.  Actually, I don't even know what all she made her dish with, but hash browns was the main ingredient. And what interested me was not the ingredients, as much as the topping.  She topped this breakfast dish with eggs.  And I thought...how brilliant!  Why have I never done this????  So today, I made my version of breakfast skillet.
First, I cooked a pound of applewood smoked bacon.  It doesn't matter how much bacon you cook at my house, it is never enough!
Then I drained off most of the grease, reserving a little bit to cook the veggies in.  I began with diced onion. Then added diced green peppers, mushrooms, and diced tomatoes.
Cook for a couple of minutes, then add one bag of shredded potatoes.  Season well with salt and pepper.
To this I crumbled the bacon into large pieces, and lightly tossed to distribute.  Then put the lid on and let potatoes brown, leaving on a medium/high heat.  About 5 minutes or so.
 Using a large spatula, flip the browned hash browns over to let the other side brown.  After it has browned on both side, sprinkle with cheese.
 Put lid back on, only a minute or two , allow cheese to melt.  Then make small indentations into top and crack as many eggs into dish as desired.  Season with more salt and pepper. There were three of us eating, so I did three.
Put the lid back on, and let eggs baste to desired doneness.  We like ours with yokes runny.
Cut into wedges, and in our case, make sure everyone gets one egg along with their serving.
We sat outside on the patio and enjoyed our breakfast along with some fresh berries.
We spooned some roasted tomato salsa onto our potato dish.  I buy this at fresh & easy.  It is soooo good.
 This was the perfect start to our day.  We worked outside, and got a lot done.  I also put in a 40 minute workout.  20 minute on the treadmill, and 20 minutes of weights and stretching.  I am already feeling it!!  UGH!
We bbq'd turkey mushroom burgers for dinner and after dinner I made these.
It was a perfect Sunday!

Your cooking always looks so great! We had an orange tree when we lived in California...I miss it every year at this time!!

I can't even begin to tell you how impressed I am. Everything looks so delicious. I'll have to try that skillet recipe.

I've made a similar dish but haven't posted about it so it wasn't me. Alas, we have no fruit that grows outdoors at the moment. However, there are many good reasons for living in the midwest. When I think of what they are, I'll let you know. =(

Now, that's what I call Sunday Brunch. We like our eggs runny too. This is on my list to try. OH, how nice it would be to dine outside again. What a fun day you had. And, your pictures are devine.

Sounds like a nice day. That breakfast looked delish. Good for you for hopping on that treadmill. That fresh oj sounds so good right now.

Oh yum to it all...Believe it or Jenny Craig has a breakfast that is called "the scramble" and it VERY similiar to this. I add the mushrooms, red and green bell peppers and onion to it just like you do and top it with salsa. One of my favorite for sure. And that side of fruit? On my plate almost every morning, haha...Perfect. Good for you on that treadmill! Have a wonderful Valentine's Day Kris!

That looks yummy...my grandma used to make something similiar but we poured scrambled eggs on top and it was one of my favorites. She called it egg and potato pie. (she was very creative naming her dishes :) We had berries last night too. Aren't they delicious and they look so pretty in your pictures.
Good job on the workout...this is my week to get back into it. Wish me luck.

Okay, I'm drooling over here. That breakfast looks fantastic. I think I might make that for dinner one night this week! And that OJ, yum! I could drink OJ ever day but don't because of the sugar in it. What I wouldn't do for an orange tree and freshly squeezed orange juice! Awe, you hit my taste buds this morning and all I have is coffee!!!

Great job on the workout! I ran last night and it felt so good, except for that fact that everyone was bbq'ing steaks! Guess I shouldn't run at dinner time!

Your dishes always look so wonderful! We have a tangerine tree and I have been putting them in everything lately...we are lucky here to have our own citrus trees!

Hi Kris, Happy V day to you, too. I bought (not made, like you did) a couple choc covered strawberries for the hubby; other than that, nothin' special. Your b-fast looks so yummy I could eat it right now. What is it about bacon? Seems I cannot make enough either. Thought of you yesterday..wondering if you were workin' in the yard like me (and you were)!

I make our "day after Thanksgiving" breaskfast by browing leftover stuffing and cooking an egg on top! WE love it it that way, This looks delcious too!
