Enchilada Party

Greetings and Happy Christmas Eve!  Well, it's here folks!  Did you get everything crossed off of your list?
Last night we had our second annual enchilada making party at my daughter Gennifer's house.  She and I both provided all of the food.  4 rotisserie chickens, 8 pounds of shredded Mexican cheese, 12 cans of Las Palmas Enchilada Red Sauce, three bunches of oninons, umpteen cans of black olives, two gigantic bags of shredded lettuce, hundreds of corn tortillas, and dozens of foil pans to put them in!!!!
We gathered for pizza first, and then got busy.  I was so busy working and orchestrating the assembly line, that I got very few pictures.  Most of these were taken by Greg with my camera.  Here we are with our aprons on and ready to work.
 My son's girlfriend Diana, the one next to me in above photo, gave me this darling apron for Christmas!  She wanted to give it to me early so that I could use it on our enchilada making night.  Does she know me or what?  Our daughter Erika was there, but she was taking these pictures, and the ones where she is in the photo, apparently are not on my camera.  Shoot!  She had to leave early for a birthday dinner for a friend of hers.
My nephew Donavon and his wife Kaylen are here from the bay area for Christmas, and they joined us last night too.  I warned them that if they came, they would be working!!!!  And good workers they were!!!

I have no makeup on, and look so tired in that picture.  Oh well.    So off to work we went.  Hannah wanted so badly to stay up and help roll enchiladas, so before she and her sister toddled off to bed, she got to roll a couple all by herself.

And when we were done, we had 15 dozen enchiladas!!!! 

Everyone took some home, and we have plenty to freeze, and plenty for our dinner tonight!  My girlfriend Armenia just dropped off homemade tamales, and we will enjoy those with our enchiladas tonight!  Muchas Gracias Armenia!!! 
Today, I will do a little baking, a little cleaning, a little last minute wrapping, and hopefully, a little resting!

  We will have our kids all here tonight.  And then again tomorrow morning for gifts and a big breakfast.  Tomorrow afternoon we will meet up with all of my family at my brother David's. 
I wish each one of you, a joyous Christmas!  I have met so many new people, through my blog, and have treasured each one of your friendships.  I have been able to stay connected with old friends, that I don't get to see as often as I would like.  I have been touched by so many of your stories, and your creative projects shared.  I look forward to another great year in 2012. 
I will be back in a couple of days to see all of you, and your holiday traditions.  Merry Christmas Friends!!

I wrote to Genn that all of your talk of enchiladas made me want some, so I made some too. I used the green chile sauce. They were so good and we've had them for a couple of meals now, since Friday night I believe. Yours look delicious! I wish I had some tamales too. Yum! Love all of your pictures, especially you and your hubby in the aprons. :)) What fun!
