Table For One

Greg had a softball game tonight at 6:30. Drew had church. Brian left at 7:00 for a hot date. Eri and Noah left at 7:00. I took the leftover salmon from dinner the other night that we bbq'd, and made a salad that really hit the spot. Cold chunks of salmon, chopped romaine, baby petit le suer peas, diced celery, hard cooked egg, green onion, parmesan cheese, smoked salt and cracked pepper with fresh lemon. Tossed in thousand island, with a side dish of oyster crackers. Heavenly. Bon Appetit

Looks so yummy! I love those peas, they are the only ones I will buy. Mmmmm.

You make everything look and sound soooo good. I wish I was better about whipping things up. Maybe one of these days!!

Kristi, Yes, those are the best peas! When they are on sale, I really stock up. I love them in salads.
Amy, thank you. If I had it to do over again, I would have gone straight from high school to Culinary School. So, instead, I just cook!

Wow! and you even set the table. Although I do make dinner for one, unfortunately I don't set the table...I eat at the counter and read while I'm eating.

Looks like a yummy salad. I agree with Amy, you make everything look so easy and good.

I don't always set the table if it is just for me. But I do always use a placemat, and real plates. I am not a fan of paper plates. Those are for camping. If I am eating alone, it is often times in front of the telly. And when it is just Greg and I, also often in front of the telly, but at our coffee table that rises up to regular table height, and I like to set it. Just makes food taste better.

We always use real plates too, even camping. I bought some corelle years ago and for dinners under the stars we use those....oh I miss camping.
