Chicken Tortilla Bake

The other day when I was with my Mom, she was telling me about a dish that her friend Kay had brought over.  She said it was delicious, and that she wanted to make it.   We talked to Kay on the phone that day, and she shared with us how she made it.  I don't know if I did it just like her, but it sure was delicious.  I made it tonight, and everyone agreed.  Greg said to put it in our regular rotation, whatever that means! 
I took a few pictures along the way.  So let's cook.  Preheat your oven to 350 degrees.
Here is what you will need.
I cooked the potatoes (Yukon Gold) in the microwave for 15 minutes, until tender.  Dice one onion, and saute in small amount of hot oil.  I minced three cloves of garlic and added this to the onion.  Slice the potatoes about 1/4 inch thin.  Add to onions when onions are well carmelized.  Then cook potatoes until browned.  Season with salt and pepper and seasoned salt.
When browned they will look like this.
When well browned, turn burner off, and begin to assemble your dish.  In very hot oil, lightly fry your corn tortillas.  I used a 9 x 13 baking dish, and it took 18 tortillas.   Begin by lightly spraying your baking dish with Pam.  Layer your tortillas onto the bottom of the dish, slightly overlapping the tortillas.  Over
the tortillas layer half of the potatoes, distributing evenly, then lay half of the chicken over that.  Sprinkle your cheese over chicken, and then begin to ladle your green sauce over all.  Not too heavily, just to moisten each layer.
About one minute or so on each side.  Maybe even less.  You don't want it too crisp, just lightly browned.
In above photo you can see that I am putting the second layer on.  You can see about how much sauce to put on each layer.  Below is the finished second layer.  I used two layers of all ingredients, then topped this with 6 more tortillas, and then topped with cheese and more sauce.  I did find that I needed a wee bit more sauce, and I only had one large can of Las Palmas Green Chili sauce, but I had a jar of chili verde, which is the same thing, that was from fresh & easy, so I spooned a bit onto the top layer.
I baked it uncovered for 35 minutes.  It came out hot and bubbly, and the smell was drawing everyone to the kitchen!  Drew and Diana had come for dinner,  and they were all anxious to eat, since the house smelled like a restaurant.
I sprinkled some fresh cilantro on the top before cutting.  I served it with refried beans, and a green salad.
This was so good!!!!  We all loved it!   I hope you might give it a try.  Be prepared to put it into your "rotation"  if you do!!!  The potatoes in this were such an unusual surprise.  They blended so well with the other ingredients.  YUM!!!  I hope you try it.  And let me know what you think!

Oh this sounds delicious. My sister makes a version of this with minced beef. I have never had it but my daughter had it over the weekend and has been raving about it. The potatoes in your recipe are so unusual, it makes me want to start cooking immediately. Nicky xx

Ingredients are either in the fridge already or on my shopping list. We don't care for refried beans so I might just heat up some spicy black beans or just add a bunch of condiments (avocado slices, red salsa, green onions, chopped tomatoes, sour cream, etc.) on the side so they can "dress" own servings. Sounds DELISH!
